A Quick & Easy Guacamole Recipe!

The other day we were making chicken fajitas for dinner, and I thought I’d make guacamole. I’ve never been a huge fan of avocados, but I enjoy guacamole when it has the other ingredients mixed in. I first tried ‘proper’ guacamole during a work trip to LA, where the Mexican food is just incredible. We would always go to Rosa Mexicano in downtown LA, close to the convention centre, and the chef would make the guacamole right at your table!     Saveur Magazine said it was ‘the best guacamole’ they had ever had and  Martha Stewart said it was ‘the best guacamole in the world’. High praise indeed. And I have to agree! My guacamole recipe is simple, quick and easy, but tastes so good! I don’t include tomatoes in mine as I’m not a big fan of raw tomatoes. A Homemade Mexican Breakfast – Huevos Rancheros

One of the best things about the business trips to LA and San Francisco at my last job were the amazing breakfasts! As I’ve mentioned on this blog before, the Mexican food there is incredible, and nothing here in the UK that I’ve tried so far compares to it. My favourite breakfast was Huevos Rancheros – fried eggs served on corn tortillas, topped with a tomato and chilli sauce, often served with refried beans, mexican-style rice, and slices of avocado or guacamole. Last weekend, we had a go at making them at home, with a Food Network recipe. For The Love of Kale!

I’m going to be completely honest about something. I don’t really like vegetables. I eat them, of course, but it’s rare that I genuinely enjoy them. I find that they’re tastiest when they’re cooked in a special way (normally making them more unhealthy!), usually using various herbs or oil. I just find plain, steamed veg, incredibly dull. Tim can happily get through a bowl of plain vegetables as a snack, and I wish I could do the same. But strangely enough, one of the types of veg that I actually do really like, is anything cabbage related – standard cabbage, red cabbage, brussels sprouts (yes, I know, I’m the complete opposite to most people!) and kale. I love kale!
